General Chemistry
Chemistry is the study of the stuff (matter) that is in and all around us, and how that matter interacts with other stuff.  Chemistry is a physical science, that is, it doesn't involve living things, but what I find fascinating is that most any scientific question, no matter how broad, can be answered with an understanding of atoms and how they stick together.  Like, why do we need oxygen to live but we die when we inhale oxygen stuck to one carbon (carbon monoxide) yet we naturally produce carbon stuck to two oxygens (carbon dioxide) all the time?  Hmmm...  If our skin is full of holes, why is our body mostly water?  Hmmm... How come the earth is below us and the sky is above us?  How come fish don't freeze to death? 

Just some thoughts.  In this class students study atoms and what's inside them, how they're held together in bonds, the different kinds of atoms in the universe, how and why they go together and get rearranged, how we can use chemical equations to figure out what we need and what we can make using chemical reactions, and the different kinds of things that are made when atoms stick together (solids, liquids, gases, acids, bases, salts, etc.)
